Makai Ki Roti is the soft, slightly coarse, unleavened flatbread that is a winter staple of rural Punjab, Haryana, Rajasthan, and Uttar Pradesh, especially served with hot ghee and white butter. Made solely from fresh corn flour (makai ka atta) kneaded with warm water and a pinch of salt, the dough is shaped by hand and dry-roasted on a tawa until it puffs slightly and develops golden-brown spots. Unlike fried breads, it has no oil or ghee in the dough itself, resulting in a tender yet hearty texture with a naturally sweet, earthy corn flavor that pairs perfectly with sarson ka saag, dal, pickles, or curd.
