Dahi Wada

Dahi Wada is a classic North and South Indian chaat dish in which soft, spongy urad dal dumplings (wadas) are soaked in chilled, sweetened yoghurt and topped with tangy tamarind chutney, green chutney, and chaat masala. The wadas must be made to a precise texture — light and spongy enough to absorb the yoghurt completely without becoming waterlogged.
